HOLIDAY DESSERT PLAYOFFS: CINNAMON BAKED APPLE BITES WITH PUMPKIN APPLE BUTTER
It’s November, and to any foodie this month it’s the playoffs of decadent desserts and savory dishes, whereas December is the Super bowl of holiday foods! I view the month of November about finding a balance and promoting a stronger mind, body, and spirit. To break this analogy down, I look at November as a warm up and series of plays that can either go north or south during this jolly season. Therefore, it’s more important than ever you constantly check in with yourself and be mindfully aware of your feelings during the holiday because they do impact our food , drink, and lifestyle choices. The more you become aware of how you feel in the present and get comforable with all types of feelings the more control you have to making better choices that hopefully empower your wellbeing and make this the most zenful holiday season yet!

CINNAMON BAKED APPLE BITES WITH APPLE PUMPKIN BUTTER (VEGAN, GLUTEN FREE)
7 Apples (Slice around the center) 3 to 4 slices from each apple (see picture)
Cranberries 28 ( one per apple)
Pumpkin Apple Butter
1 Cup of Pumpkin Puree Canned Organic
2 4 oz apple sauce cartons (unsweetened organic)
½ cup of Almond Butter
¼ teaspoon of salt
1 teaspoon of Nut Meg
2 Tablespoon of Coconut Nectar (Use Honey if you don’t have or Agave light)
Directions: Heat Oven to 325 Farenheit. Grease two large muffin pans and put slice of apple in each cup and sprinkle cinnamon over each slice. Pop in the oven for five minutes, but if you want a bit crispier go for ten minutes. Then take out and cool.
Butter Spread: Add all ingredients in a blender or bowl and mix until it’s even. Then take a spoonful and put on each apple with one dried cranberry for a bit more flavor and your ready to serve.
